Ingredients (Serves 4-6)
- 1 medium sized avocado, peeled and diced
- 1/4 or less cucumber, finely chopped and diced
- 1/2 tomato, finely chopped
- 1/2 purple onion, finely chopped
- juice of 1 lime, freshly squeezed
- 4 tbsp hemp, olive or flaxseed oil
- 1 twig of coriander (dhaniya)
Mash the avocado pieces with a fork in a bowl until it has a creamy texture. Add all the other ingredients and mix thoroughly. Add the oil (hemp, olive or flaxseed) and decorate with the coriander.
