Cashew Nut Mixed Salad

Ingredients (Serves 4-6)
- 1/2 red pepper, sliced
 - 1/4 medium red cabbage, finely sliced
 - 1/4 medium white cabbage, finely sliced
 - handful of watercress
 - 6 green olives, sliced
 - 4-5 leaves of lettuce, chopped
 - 1/2 red onion, sliced finely and soaked in lime juice
 - 1 tomato, diced
 - 8 slices of cucumber, quartered
 - handful of parsley
 - handful of cashew nuts, roasted
 - Lemon Honey Dressing
  
Procedure 
Mix all ingredients into a bowl. Roast the cashew nuts on low heat on a pan for five or so minutes till they start turning brown, then add to salad. Add lemon honey dressing.
